I wanted something relatively simple for lunch, so I rustled around in the fridge and the pantry today and came up with this:
- A cup or two of steamed brown rice
- Some grated jack cheese
- A few tablespoons of fresh pico de gallo (tomatoes, onions, cilantro + diced jalapeños)
- (mixed those together, and heated in the microwave for a minute or so)
- A perfectly ripe, diced Hass avocado (mixed in with the rice ‘n stuff after microwaving)
- A glass of milk
I have to say, that turned out to be a delicious lunch. I’ll need to remember it
